Rich and Creamy Cider Sauce

 

2 small onions diced
4 cloves crushed garlic
40g butter
2 tablespoons olive oil
1 inch root ginger, chopped finely

  • Sweat these items together.
  • Add 500ml cider and reduced by half.
  • Add two teaspoons chopped thyme and 250ml chicken stock and reduce by half.
  • Add 300ml double cream and 2 tablespoons brandy and some ground pepper and warm through gently.
  • May be used with pork,┬áchicken or for a vegetarian dish, assorted vegetables.
